If Adult Swim is it's own channel or network or whatever, what benefits that's bring?

For ratings purposes.

I know why it's a network but how is it different than a block?

It's different from a block in that [as] receives its' own separate set of ratings and advertisers, and it's targeted toward a completely different audience and demographic than CN is, and also runs continuously throughout the night for about 7 hours. (the same way that Nick at Nite differs from Nickelodeon.) A block like say, Toonami or Fried Dynamite, by contrast, is only 2-4 hours long and targets the same audience as all of the other CN shows. Not long enough or different enough to be considered its' own network.

The benefits are that [as] allows the producers to run shows that couldn't be aired on CN, and with [as] they can attract the 18-25 year-old demographic, which they can't do with the majority of CN's programming.

That's all I wanted to know. But in Cartoon Network's heyday they never really needed something like that. I can name shows and bumpers that would now be considered "adult" that played on the network before. I know a Adult Swim channel would be bad for a number of reasons but let's say they did make a channel, all of this "demographic" stuff wouldn't matter and CN would be a children's network... which it is already... but Adult Swim helps out?...
